In other news...

House feels really busy like an airport for some reason...

Speed*racer had an unfortunate crash. There was initial damage to the car, but everyone walked away fine and the car was able to be fixed...

A baby tried to crawl under a chair and met some obstacles. Luckily her sweet Father was able to help get the little tike out and back on track. This incident was documented by her loving Mother for your viewing pleasure...

Awesome Snack Mix recipe
My friend Kari made me this awesome Corny Snack Mix, and sent along the recipe. Now, while the gift was to me, my husband sampled it first. He ended up eating almost all of it himself, it was so good!! So we thought we would make it for the family for Christmas Eve when we get together with his side as a snack. I thought I would share the 'adventure' as I attempted to make this assumingly simple recipe...
The recipe I received:
Corny Snack Mix
3 quarts popped popcorn
1 package (15 oz) Corn Pops
1 package (15 oz) corn chips
2 packages (10 to 12 oz each) vanilla or white chips
Directions:
In several large bowls, combine the popcorn, Corn Pops, and corn chips. In a large saucepan, over medium-low heat, melt chips; stir until smooth. Pour over popcorn mixture and toss to coat. Spread onto two 15 in x 10 in x 1 in baking pans. Cool. Store in airtight containers. Yield: 7 1/2 quarts.
Simple, right? How could I mess this up?? Follow along...
I head to the grocery store on Sunday afternoon alone, because Katie is sick and it's REALLY cold out. I head to @ldi's since I am alone, and would really like to save some money! When I arrive at store, I realize I forgot the notecard with the recipe on it. I can remember 3 of the 4 ingredients. I break down and call Chad to find out what the important 4th item is. As I pull out the phone, I notice I have a missed call. Chad has already called. I've been gone maybe 10 minutes. Call Chad and ask him to please tell me what the ingredients are on the recipe. He reads them out to me. Have trouble hearing him because there is a baby crying in the background. I thank Chad, and hang up. Also, try to shake Mommy guilt for leaving the man with two kids, one of which is sick. Figure out that the one ingredient I need is Corn*Pops. For some reason, while I'm in the store, I forget that this is a cereal. I'm looking at chips trying to find corn*pop chips. Brilliant, I know. Also, I have already sub'ed the vanilla/white chocolate chips with "White Bark Coating". Let's hope it tastes like chocolate. So in my infinite wisdom, and trying to hurry I grab a bag of corn curls. Yes, I know - brilliant (not so much). Go through checkout, freeze fingers literally off my hand while trying to load groceries that I did not pre-bag while inside the warm store because I forgot my bags in the car. Drive through McD's and head home. When I get home, talk to hubby, and we figure out that Corn*Pops is a cereal. Not going back out in the freezing cold, I find a box of Rice Chex that's been in my pantry for 6, no 4, no let's go 2 months. It will do.
Today Keegan & I made the delicious snack. It was alot of fun to make with him, and it turned out well!! I can say it's delicious, because we have each sampled and it turned out very yummy! Seriously though, can you go wrong pouring chocolate over anything??
Hopefully the family will enjoy!! I wish everyone a wonderful, happy, safe Holiday and New Year!!
